Chicken Tortilla Soup
Ingredients
- 2 Tablespoons Butter
- 1 Onion
- 2 Jalapeño Pepper
- 3 Cloves Garlic
- 15 Oz. Frozen Corn
- Use the frozen roasted corn package from Trader Joe’s
- 15 Oz. Diced Tomatoes
- Use the diced, fire-roasted tomatoes from Trader Joe’s
- 15 Oz. Black Beans
- 5 Cups Chicken Broth
- 4 cups of water with 5 teaspoons Better Than Bullion
- 2 Cups Shredded Chicken
- 1 Teaspoon Cayenne Pepper
- 1 Teaspoon Cumin
- 1-2 Teaspoons Hot Sauce
- 3 Tablespoons Taco Seasoning
- Equivalent to 1 packet of taco seasoning
- 1 ½ Cups Sharp Cheddar Cheese
- ⅓ Cup Cream Cheese
Instructions
- Use butter to sauté onions and peppers in pan for ≈4 minutes. Add garlic and cook for another minute.
- Add all remaining ingredients except the cheddar cheese and cream cheese.
- Let the soup gradually come to a gentle bubble, partially covered. Stir periodically.
- Add cheddar cheese and cream cheese. Stir to melt them into the soup.
