Buffalo Chicken Chili

  1. Cook chicken in olive oil, breaking meat until small pieces until cooked throughout (about 8-10 minutes). Set aside and keep warm.
  2. Chop baby carrots into small pieces. Place in water and microwave for 4-5 minutes until soft.
  3. In the same (now empty) pan, add onion, carrot, celery, garlic, chili powder, cumin, paprika, salt, and pepper. Cook while stirring until the vegetables soften (about 5-6 minutes).
  4. Add white beans, refried beans, chicken broth, water, and chicken. Bring to a boil and simmer covered on medium-low about 25-30 minutes, stirring occasionally.
