Buffalo Chicken Chili
Ingredients
- 1 Pound Chicken
- 1 Tablespoon Olive Oil
- 1 Onion
- ½ Cup Baby Carrots
- ½ Cup Celery
- 3 Cloves Garlic
- 1 ½ Teaspoons Chili Powder
- 1 ½ Teaspoons Cumin
- 1 ½ Teaspoons Paprika
- 15.5 Oz Can Great Northern White Beans
- 16 Oz Can Refried Beans
- 1 Cup Chicken Broth
- ½ Cup Water
- ½ Cup Hot Sauce
- Salt
- Pepper
Instructions
- Cook chicken in olive oil, breaking meat until small pieces until cooked throughout (about 8-10 minutes). Set aside and keep warm.
- Chop baby carrots into small pieces. Place in water and microwave for 4-5 minutes until soft.
- In the same (now empty) pan, add onion, carrot, celery, garlic, chili powder, cumin, paprika, salt, and pepper. Cook while stirring until the vegetables soften (about 5-6 minutes).
- Add white beans, refried beans, chicken broth, water, and chicken. Bring to a boil and simmer covered on medium-low about 25-30 minutes, stirring occasionally.
