Broccoli Cheddar Soup
Ingredients
  - ½ Chopped Onion
- 1 Cup Shredded Carrot
- 1 Cup Chopped Celery
- ½ Stick Butter
- 2 Tablespoons Olive Oil
- ½ Cup White Flour
- 3 Cups Chicken Broth
- 1 Cup Milk
- 12 Ounce Package Broccoli
    
      - Steamed in bag for 4 minutes
 
- 2 Cups Sharp Cheddar Cheese
- 1 teaspoon Salt
- ½ teaspoon Pepper
- ¼ teaspoon Nutmeg
Instructions
  - Melt butter in a large pot along with oil. Add onions, carrots, celery, salt, pepper and nutmeg. Cook until the veggies are soft.
- Add the flour to the mixture and stir to make a roux.
- Slowly add chicken broth and milk and stir until thick and boiling.
- Reduce heat to low. Mix in broccoli. Add cheese and gently stir until melted.
